Bulletin BoardIn a group, I advertised healthy snack options for 4-5 year old children at a preschool and kindergarten. Our objective was to provide parents of the preschoolers and kindergartners with recipes and ideas for nutritious snacks after school that included 3 food groups. Our theme was after the book, "The Very Hungry Caterpillar" by Eric Carle. But since our topic was about nutritious snack options for children, we titlted our bulletin board, "The Very HEALTHY Caterpillar." We included a Great Tips section that discussed the topic of how to address picky eaters as well as the topic of Division of Labor by Ellyn Satter. We also included information about ChooseMyPlate and slogans discussing each food group, "focus on fruits," "vary your veggies," "go lean with protein," "make at least half of your grains whole," and "get your calcium-rich foods." Our goal was to inform the students' parents about how to help their children eat more nutritious snacks. The purpose of our project was to educate parents about healthy snacks, give ideas for easy snacks, as well as tips to parents to help their kids become independent, nutritious eaters.

Crohn's Disease Lesson Plan
A great tool for teaching individuals in one-on-one consultations is utilizing the flip chart method. I created a flip chart for a newly diagnosed Crohn's disease patient. I first created a lesson plan to establish objectives and the process of how I meet these objectives--which helped me stay on topic. Topics discussed in the lesson include information about what Crohn's disease is, how Crohn's affects the digestive tract, and the explanation of two trends in the diet that can be altered to help with the digestive pain. The two trends include: 1) reducing fiber and 2) reducing fat. I used an activity called Good Example vs. Bad example within the flip chart to allow the patient to discover the two trends on their own by guessing the similarities about what is good to eat. This critical thinking process will help the patients remember the trends more easily. After the patient has learned the two trends, he/she will discuss meal options that can be applied to everyday life.
Reducing Sodium Intake Lesson Plan
For a final project, a partner and I created an hour long lesson plan for teaching patients recovering from myocardial infarctions or bypass surgery. The lesson involves cognitive, affective, and psychomotor teaching styles which discusses how a low-sodium diet can be achieved by: 1) reading food labels, 2) being aware of common high sodium containing foods, and 3) increasing the amount of potassium in the diet. I learned that to effectively teach a lesson that covers many topics, a prepared lesson plan can organize thoughts and content to ensure correct topics are being taught.
